Gingerbread Muffins


These are one of Victoria's favorites!

Gingerbread Muffins

2 Table oil
1 egg
½ cup molasses
¼ cup honey
1 ¼ water or milk

2 cups whole wheat flour
2 Table lecithin
2 teas cinnamon
1 ½ teas ground ginger
½ teas soda
1 ½ teas baking powder
¼ teas salt

DO NOT OVER MIX! Bake 20-25 minutes @ 350 degrees or until tops are cracked.
